Pumpkin Pancakes

This recipe came from Leanne VanGilder, we just ate these this morning as part of our early Thanksgiving feast!!

2C Flour (wheat flour works great too that's what I used today)
1/2 C white sugar
1/4 C brown sugar
1 Tbsp baking powder
1/4 tsp pumpkin pie spice
1 tsp salt
3/4 C milk
1 C canned pumpkin
2 eggs
2/3 C oil
1 tsp vanilla

Whisk the dry ingredients together. Beat the wet ingredients by hand, then mix the wet into the dry. Cook on a griddle at 300'. This makes 13 pancakes when using the 1/3 C to put the batter on the griddle with.


Some wonderful topping ideas include:
applesauce
toasted walnuts
a sprinkle of nutmeg
butter with maple syrup
whipped topping
sweetened sour cream

I used 1/4 C sour cream
2 1/2 tsp brown sugar
1/2 tsp vanilla
to make the sweetened sour cream
