1 1 lb bag of refrigerated pizza dough ( I used Pillsbury dough in a can which worked fine)
1 C Ricotta
1 C shredded mozzarella (4 oz)
3 Tbsp grated Parmesan
4 oz salami, roughly chopped ( I used turkey pepperoni)
2 Tbsp olive oil
jar pasta sauce
flour for the work surface
Heat your oven to 400. Divide the dough into 4 equal portions. On a lightly floured surface roll each portion into a 7" round. Transfer to a baking sheet lined with parchment paper or foil. In a medium bowl combine the ricotta, mozzarella, Parmesan, and salami. Spoon some of the cheese mixture over half of each round, leaving a 1/2" border . Use your fingers to wet the border with water. Fold the uncovered side of the dough over the filling. Press the edges to seal. Lightly brush the top of each calzone with the oil. Bake until golden, 20-25 minutes. Serve with warm pasta sauce on the side.
