This is from Everyday Foods Mar 2005
I used ground turkey instead of hamburger. Omitted the bacon,used dried parsley and fresh breadcrumbs instead of dry.
1lb lean ground beef
2 slices bacon finely chopped
1/4 C chopped fresh parsley
2 garlic cloves minced
3 Tbsp grated Parmesan cheese
1 Tbsp plan dried breadcrumbs
1 large egg
1/8 tsp nutmeg
1/2 tsp salt
1/4 tsp pepper
In a large bowl combine all ingredients. Shape mixture into 40 meatballs using the 1 tsp measuring spoon to help you get the correct amount of mixture into a ball. Arrange them in a single layer on a baking sheet. Freeze for one hour. Once frozen transfer to an airtight container or resealable plastic bag; label and date.
