Apple Crisp from Sarah Eskestrand
5-6 C peeled and chunked apples
1 C sifted flour
1 C sugar
1 tsp baking powder
3/4 tsp salt
1 egg
1/3 C melted and cooled butter
1/2 tsp cinnamon
1/2 C brown sugar
PAM
Preheat the oven to 350, place prepared apples into a 6x10 pan that has been sprayed with PAM. Mix flour, sugar, baking powder, salt and egg until crumbly. Sprinkle over apples. Drizzle the butter over all of that. Sprinkle the cinnamon and brown sugar on top of everything. Bake for 45 mins.
**PS, 4 good size apples gives you 5 1/2 cups. Yes that is my wooden spatula in the picture.It's hanging out waiting to scoop out the next portion for someone lucky. This is wonderful warm and also makes a nice breakfast if you put the leftovers in the fridge for the next day.**
